નવી દિલ્હીઃ મીઠાઈથી મસાલા સુધીમાં મિલાવટ થતી હોય છે. જોકે, હવે આ લિસ્ટમાં એક વધુ નામ જોડાઈ ગયું છે અને તે છે જીરું. હવે જીરું ખરીદતી વખતે ધ્યાન રાખવું, કારણ કે માર્કેટમાં નકલી જીરું મળે છે.
જીરું ભોજનનો ટેસ્ટ વધારે છે અને સ્વાસ્થ્ય માટે ઘણું જ ફાયદાકારક છે. શાકભાજીથી લઈ અનેક દેશી દવાઓમાં પણ જીરુંનો ઉપયોગ થાય છે પરંતુ હવે આ ગુણકારી જીરામાં પણ મિલાવટ થવા લાગી છે.
દિલ્હી પોલીસે બવાનામાં નકલી જીરું બનાવનારી ફેક્ટરીનો ભાંડો ફોડ્યો છે. અહીંયા એક ખાસ પ્રકારના ઘાસ (જેના ફૂલમાંથી સાવરણી બનાવવામાં આવે છે), પથ્થરના દાણા તથા ગોળનો ઉપયોગ કરીને નકલી જીરું બનાવવામાં આવે છે. પોલીસે ફેક્ટરીમાંથી 20 હજાર કિલો તૈયાર નકલી જીરું તથા 8 હજાર કિલો કાચો માલ પકડ્યો છે. નકલી જીરુની ફેક્ટરીનો માસ્ટરમાઈન્ડ યુપીના શાહજહાપુર સ્થિત જલાલાબાદનો છે. આરોપીઓએ કહ્યું હતું કે તેમને નકલી જીરુ બનાવવામાં થોડી પણ મહેનત કરવી પડતી નથી. નકલી જીરુ બનાવવામાં માત્ર 3 વસ્તુઓ જોઈએ.
જંગલી ઘાસ, પથ્થરના દાણા તથા ગોળના ઉપયોગથી નકલી જીરુ બનાવવામાં આવે છે, જે બજારમાં સસ્તા ભાવે વેચાય છે. આ જંગલી ઘાસ યુપીમાં 5 રૂપિયે કિલો મળી જાય છે. નકલી જીરુ બનાવવામાં જંગલી ઘાસ નદીના કિનારે ઉગાડવામાં આવે છે. આ ઘાસમાં જીરુની જેમ જેમ નાના-નાના પાંદડાઓ ચોંટેલા હોય છે, જેથી અસલી જીરુ છે કે નકલી તેનો ભેદ તરત ખબર પડતી નથી.
ઘાસની આ નાના-નાના પાંદડાઓને ગોળના પાણીમાં નાખીને સૂકવવામાં આવે છે, જે જીરુ જેવું બની જાય છે. ત્યારબાદ પથ્થરના બનેલા પાવડરમાં મિક્સ કરી દેવામાં આવે છે. પથ્થરના પાવડરમાં મિક્સ કર્યાં બાદ મોટા ચારણામાં ચાળી લેવામાં આવે છે. આમાંથી નકલી જીરુ નીકળે છે અને તેને સૂકવવામાં આવે છે. જીરુ જેવો રંગ આવે, તે માટે સ્લરી પાવડર ફરીથી નાખવામાં આવે છે.
બજારમાં અસલી જીરુ 300 રૂ. કિલો છે, જ્યારે નકલી જીરુ માત્ર 20 રૂ. કિલો દુકાનદારને વેચવામાં આવે છે. આ નકલી જીરુ સ્વાસ્થય માટે ખતરનાક છે. સતત આ નકલી જીરુ ખાવાથી રોગ પ્રતિકાર શક્તિ પર અસર પડે છે. આ ઉપરાંત પથરી તથા સ્કિન સંબંધિત બીમારી થવાની સંભાવના વધી જાય છે.
કેવી રીતે નકલી જીરુને ઓળખશોઃ
અસલી તથા નકલી જીરુને ઓળખવું તદ્દન સરળ છે. એક વાટકીમાં પાણી લો અને તેમાં જીરુ નાખો. જો જીરુનો રંગ જાય અને તે તૂટવા લાગે તો તે નકલી છે. આ ઉપરાંત નકલી જીરુમાં કોઈ જાતની સુગંધ હોતી નથી. અસલી જીરુ મજબૂત તથા પાક્કું હોય છે. પાણીમાં નાખ્યા બાદ પણ તે એમ ને એમ જ રહે છે.
